Mushroom and Lemon Couscous: Five-Minute Fancy

While I love the idea of having something different for my Sunday lunch, I don't really like the idea of spending a long time cooking, chopping, washing - it's a never-ending list of complaints, and what I want is something fun, fast, light for lunch.  I picked up a packet of couscous this weekend and added a bit of this and that to jazz it up :D

Mushroom and Lemon Couscous:  The recipe is from the box - modified a bit to suit my Indian/vegetarian diet.

Ingredients Used/Change in Recipe:
  • I used plain water instead of chicken broth.
  • Red onions - no green onions at home.
  • Added 1 green chili while sauteing the mushrooms for some added heat.
  • Used regular grated cheddar cheese.
Method (it's mostly photos only since the recipe is essentially what is shown in the box):

Cook the couscous in 1-1/4 cups of water as instructed.  Keep aside.

Saute finely chopped, garlic, green chili, red onions, and mushrooms in butter.  Season with salt and a bit of pepper.

Mix the cooked couscous with the sauteed vegetable mixture along with 1/4 cup of grated cheese.

I served it with a simple raita (yogurt mixed with finely chopped onions, cilantro, and green chili).

Fancy enough for me and definitely fast and easy to prepare for just about anyone - do give this a try (serve with a spicy vegetable or meat stew if you don't mind some extra cooking).

    You know my cousin took me to this leather market in Kanpur and everything was so cheap there.There are wholesale shops which sell to big brands .I got 3 bags plus wallet plus belts :D :D
